Ice Cream Rolls
My son decided that he wanted to skip over the traditional Cake and ice cream for his birthday and go for the ultimate mash-up… The Ice Cream Roll. Recipe, instruction, ingredients, and more photos after the jump.
Start by beating 4 eggs for 5 minutes. Mix in 1/2 cup of water and the cake mix at LOW speed.
Mix it all together for 2 minutes at high speed and grease 2 pans. I used cookie sheets.
Separate the batter into the two sheets and spread it out.
I prefer to make the rolls one at a time. So while the first roll is baking at 350 for 14-20 mins. take a dishtowel and spread it out on the counter. Cover the towel with powdered sugar.
When you pull the pan out of the oven, flip it onto the powdered sugar. You should have greased the pan good enough to have it pop right out, but be sure to get down close or the powdered sugar will fly everywhere. I know.
Roll up the cake in the dish towel and let it cool.
This is about the time to take out the ice cream. Let it sit for a bit and get soft. Put it onto the cooled, un-rolled cake and smooth it out.
Once it’s spread out, re-roll it and then wrap it in foil.
Repeat the process with the other cake. We thought that strawberry would be a nice combination. After it’s rolled, put them in the freezer over night.
 They get pretty solid, but not rock hard overnight. Go ahead and take them out and start to cut them into serving sized pieces.
I like to decorate them a bit with some chocolate syrup.
Put in the candles and then watch the kids make a mess.
…and that’s not even all the kids! 😀

Those look YUMMY – finally, a use for store bought cake mixes! Awesome!
I’m sure that I can make them look prettier, but in the end, it’s still cake and ice cream!
